Figlmüller Wollzeile – Tradition Served Since 1905
Figlmüller Wollzeile’s story begins in 1905, when Johann Figlmüller opened a small wine tavern just behind Vienna’s St. Stephen’s Cathedral. What started as a cozy Beisl (Austrian bistro) soon became known for one very specific thing: schnitzel. But not just any schnitzel. Johann developed a version using pork instead of veal, making it more accessible while maintaining all the richness and texture of the classic dish.
The now-famous technique of pounding the meat to a nearly translucent thinness, breading it by hand, and frying it until the crust crisps into golden perfection was perfected over generations. The result? A schnitzel so large it spills dramatically off the plate.

The restaurant survived two world wars, the rise and fall of empires, and changing food trends, always sticking to its core identity. Over the decades, Figlmüller became a byword for quality and tradition, drawing everyone from locals to celebrities, politicians, and well-informed travelers. Today, it’s still run by the Figlmüller family, now in its fourth generation.
What’s particularly charming is how little has changed inside the Wollzeile location. The original wooden interiors and brass fittings have been carefully maintained, giving diners a sense of continuity. While there’s a second branch now on Bäckerstrasse, Wollzeile remains the flagship – the place you go to connect with over a hundred years of Viennese culinary history.
What’s notably absent, however, is that Figlmüller Wollzeile doesn’t serve beer, coffee, or dessert. That’s a deliberate choice rooted in the restaurant’s philosophy. The drinks menu focuses on Austrian wines that complement the food without overpowering it. And when it comes to coffee or sweets, you’re encouraged to enjoy dessert or a Melange at Figlmüller Bäckerstrasse.
Even with global fame, Figlmüller Wollzeile hasn’t diluted its character. It still feels unmistakably Viennese.
